GREAT KAROO NATURAL LAMB
Oven Baked Lamb Shanks
There are few things as delicious and comforting as lamb shanks on a cold winters day.
INGREDIENTS:
- 4 lamb shanks
- 30 ml coconut oil
- 2 onions, chopped
- 5 carrots, cut
- 3 potatoes, chopped
- 6 cloves of garlic, chopped
- 500 ml of red wine
- 4 tomatoes, peeled and cut in wheels
- 500 ml water
- 250 ml chutney
- 5 ml rosemary
- 5 ml thyme
- 1 lemon, zest
INSTRUCTIONS:
1) Heat coconut oil, fry onion until golden brown.
2) Place lamb shanks in a large pot, season with salt and pepper.
3) Fry shanks until golden brown for about 10 minutes.
4) Place shanks in casserole. Add the other ingredients.
5) Cover and bake for 2 hours at 180°C.
