Stuffed Deboned Lamb Rib
Lamb rib role stuffed with feta, capers & sun-dried tomatoes.
INGREDIENTS:
- Rib breast
- 1/2 chopped red onion
- 50g capers
- 100g feta
- 100g chopped sun-dried tomatoes
- Half a cup of white wine
INSTRUCTIONS:
1) Debone lamb rib breast.
2) On the site where you remove the bone, season with salt, pepper and lemon juice.
3) Fill with red onions, capers & sun-dried tomatoes.
4) Roll tightly and secure with butchers string.
5) Place in cooking bag with wine and close.
6) Place in casserole and bake for 2 hours at 180.
7) Divide into 8 pieces and place on a braai grid.
8) Braai for 10 mins over slow coles.
