Butterflied Leg of Lamb with Pesto
Beautiful leg of lamb marinated with a pesto sauce.
INGREDIENTS:
- Leg of lamb
- Olive oil
PESTO:
- 150 g coriander pesto
- 1 teaspoon cinnamon
- 2 ginger roots, finely chopped
- 2 cloves of garlic, finely chopped
- 1 lemon, zest and juice
- Pinch of cumin
- Salt and pepper to taste
INSTRUCTIONS:
1) Butterfly leg and debone. Butterfly any thicker pieces further to ensure an even cook.
2) Score the leg of lamb
3) Drizzle the leg of lamb with olive oil
4) Mix all the ingredients for the pesto marinade in a small bowl
5) Rub the leg of lamb with pesto marinade
6) Braai over medium coals for 15 minutes
