Leg of Lamb Sosaties

There is nothing quite as South African as a good sosatie cooked over a fire.

INGREDIENTS:
- Leg of lamb (cubed)

SEASONING:
- 10 ml salt
- 5 ml fresh ginger, chopped
- 2 gloves of garlic, chopped
- 3 ml pepper

SOSATIE MARINADE:
- 3 onions, cut into rings
- 125 ml water
- 25 ml sugar
- 40 ml curry powder
- 5 ml salt
- 10 ml turmeric
- 90 ml apricot jam
- 125 ml vinegar

FOR SKEWERS:
- 1 pineapple, cubed
- 1 onion, cubed

INSTRUCTIONS:

1) Season cubes with seasoning

SOSATIE MARINADE:

1) Fry onions till golden brown and add all the other ingredients
2) Cook for 15 minutes over low heat until sauce thickens
3) Cool marinade
4) Mix marinade into the cubes and leave in the fridge for 2 days
5) Let skewers soak in lukewarm water for 10 minutes. This prevents splinters!
6) Skewer alternately with cubes of meat, pineapple and onion
7) Roast over cool coals until cooked
